My daughter and future son-in-law want help in choosing one of these fish dishes for their rehearsal dinner the night before their wedding. In addition, there will be another dish for guests to choose from - probably lamb - but we need help deciding which of the following fish selections seems better. FYI - the dinner will be held in a very lovely (and classy) French restaurant called "Le Chateau". (N.Y., not Paris ) Everyone's input will be much appreciated.
1.) Steamed West Coast Halibut, Coconut Milk, Safron Sauce
2.) Pan Seared Red Snapper with Sundried Tomatoes, Garlic Confit and Champagne Vinegar

Hi Shoesy,
I'd pesonally go with the Pan Seared Red Snapper. I think that the presentation would appeal to more people (some people might want seafood but might not like the taste of coconut)...and to me, the sundried tomatoes/garlic confit/champagne vinegar sounds more elegant, while the coconut milk/saffron sauce reflects a more casual feel. But that could just be me!!

I concur with the Red Snapper, one of my favorite fish and not always easy to find. I do like halibut but hate coconut. It is nice with a red wine sauce, however. You must be so excited with all of this getting closer. Even though OFF Topic, I would love a wedding report.

Thanks guys. Gitte agrees with you, but in the chatroom Truffaut and Dep seem to think the halibut is a better choice. Holger - I'll be more than happy to post an off - topic wedding report.

Although my personal preference would be the halibut, I would vote for the red snapper at the rehearsal dinner simply because a lot of people have an aversion to coconut (don't know why..I love it). The flavors going with the red snapper are more versatile. Both are mild flavored fish, so no problem there.

As a non foodie, based strictly on how I like fish prepared, I would opt for "Pan Seared" over "Steamed". Either way, I'll bet it will be a room full of joy.

Hmmm....at first I thought halibut, but I like coconut too and then I recall...my children and how they all don't like coconut (much to my chagrin) and sadly , there are a number of others who (inexplicably) don't like coconut...thus I think since the snapper sounds truly delicious too, that likely it may be best choice..but then Truffaut and Dep are wise ones ... hmm...I am sure that both dishes taste devine! (and maybe the coconut flavoring is not too strong).

Well, keep in mind that I love coconut. My partner, however, won't touch it. So, maybe the snapper would be a better choice.

I agree that coconut is way too controversial for some. And health wise the other option is better, too. As for flavors option one will be rich and reamy, but I am more of a tangy, zesty gal who would be attracted to the zing of the Champagne vinegar...

The only way I will eat Coconut is fresh cut on the beach at Pinney's in Nevis. It has a totally different flavor or perhaps it is because of where I am when I eat it that way. But whenever it is part of a dish here it seems like the difference between real and processed cheese. But Shoesy, everyone will be so happy when eating at the festivities that I predict whatever is served will be enjoyed. ;D
