This seems like a good board for favorite shops to be listed. I mentioned this store in another thread but I'm afraid it would be hard to find again if someone were looking for it.
For an extensive selection of calvados (apple brandy) and armagnac (like cognac, but just from a different region), try Ryst Dupeyron, located at 79 rue du Bac.
They have many small bottles in a wide variety of years, that are popular as birthday gifts (match the bottle to the year of birth). My recollection is that they also have tastings. As with cognac, aged calvados and armangnac are much smoother than "younger" ones (which tend to be a bit -- or sometimes a lot -- harsh).

I highly recommend a Calvados called "Domaine du Tertre". It is a single, small batch calvados that is not thinned to adjust it's alcohol content. It's quite potent and has a taste to match. It's rather difficult to find, and runs around $80 a bottle. I do know it's available at Vin en Tete on rue des Batignolles in the 17th.
