Hi all, Just discovered a brand new Paris food blog that I am already addicted to! : parisbymouth.com/Discovered it on John Talbott's blog johntalbottsparis.typepad.com/john_talbotts_paris/which I also love... I have a question for you...
Who has tried food garnished with various foams? Are they good? What's the texture like?
I have a pretty strong constitution, and am very adventurous about trying new things, but I have to confess...photos of things with foam on them just turn my stomach. I don't know why, but I find that concept absolutely revolting.
Are they good enough to fight back the nausea and try them? Or are they another of the silly fads that will (hopefully) soon fade to some aged cookbook?

Just had a dinner at Le Bec Fin in Philadelphia where classical French Cooking has been replaced by the newer trend to less butter, etc. The use of foam was everywhere. Frankly, I wanted the older more traditional and richer sauces. The food while excellent was not enhanced by the foams, at least not in my opinion. They seemed to me to be embellishments and not really part of the food tastes.
My favorite restaurants in Paris tend to the traditional and that is true for me in general.

I love this site! Discovered it last week and was excited to see the opening was at Daniel Rose's Spring boutique. I really can't wait until Daniel opens his new restaurant, I heard he's now targeting end of June which means it should be open by the time we get there in the fall.
I love that all the sites I go to can now be accessed from one place. And those pictures!!!!!!

Amy, I could not agree with you more about foams. They are a fad that I hoped would have died out by now. It just screams "precious". Add to that the fact that, in a nice restaurant (thinking of Le Bec Fin here) would it kill the chef to make a decent sauce?? Any dishwasher can whisk enough air into something to make a foam. It takes a surehanded chef to make a good sauce. Grrrr I hate foams! On the other hand, I will be sure to check out that website, Sis

Sunshine - I've had it a few times and haven't noticed that it tates like anything at all and, in my opinion, it adds nothing to the food. I thought the fad would have been over by now.

I think I enjoyed my first foam.....but I think that was about it.........
And Holger I'm with you....whenever I read how "all of Pari" is flocking to some new fusion/new fangled type of place or the latest hot non-french cuisine....I say Great! saves tables for me at the traditional, "old fashioned', or tried and true spots!

Well, I'll take the foam as long as what's underneath, or beside, is yummy!
Most of the bloggers who are on this new site are the kind I like...not so much about what's the hot spot and what's new and trendy, more about what's a true value. There is some of the former, but I'd be like that too if I lived there. And many do recommend places that serve more "traditional" French food as well as the new more fusion type of cuisine. So that's why I was so excited to find it...

Just read today's postings. I have to disagree with their one recommendation! The Petit Palais cafe is the worst food I've ever had in Paris. The baguette resembled a American hot dog bun! Belch!
