Jody, Thanks so much for this article. While I do not consider myself a "foodie," I do always stop in at Poilane while in Paris. Their bread is real comfort food for me. I was sorry to read about Appolonia's parents, as I was not aware of the helicopter crash. It is so nice to hear that she is carrying on, as her parents most surely would have wanted her to. KH

Thanks for posting that story, Jody. I enjoyed reading it. I remember, shortly after her parents were killed, reading a blurb about Apollonia continuing her studies at Harvard while also running the bakery business. I was impressed with her then and continue to be today. She's quite a lady.

When I first learned her parents had been killed and what she was planning on doing, I didn't think it would be possible to attend Harvard classes and run a huge business. It is amazing that she has accomplished this. Her parents would have been so proud

If you EVER get a chance to go to Poilane in the 6th, do so. And when you are there, if it is slow, ask if you can see the ovens. Or better yet send an email before your trip and make an appointment. They bake all this wonderful bread in this little tiny basement with wood fired ovens, it is hot as hades and the little guy down there will take the time to demonstrate for you. The people at Poilane are really so incredibly kind...

I did have that chance last year - I had just stopped in to see the bakery that I had read about and the next thing you know, I was led down to the bakery to see the ovens - really interesting and you're right about it being hot as hades there! Glad I didn't have to stay down there too long! Love their products and bought several things to take with me.
