So I was inspired! On the same day I purchased polenta, Laidback posted a photo with polenta and Sister Europe posted a photo of mushrooms!
So last night I sauteed shallots and garlic in a mixture of olive oil and butter, then added cremini, chanterelle, and white mushrooms. Some balsamic vinegar and Beaujolais nouveau....reduce..serve over polenta! Delicious!
With the leftovers I'll add some grated cheese...last night I just wanted the rich, woodsy taste of the mushrooms! (unseasonably cold here..we are supposed to be having a high of 50 F...not making it out of the 30's! Take back your cold front Joan and Luc..and any other Canadians!)

That sounds delicious! One of my favorite cold weather dishes in France is a mushroom veloute.

They were delicious Becky, with and without the cheese!! And I've a portion frozen..and we had some snow flakes this AM and it is not so great out today..on and off showers so.....comfort food in order!!
Could be one of my "go to" dishes this winter....varying the mushrooms as to availability...
