For all kir lovers who haven't managed to smuggle a bottle of crème de cassis back home or who have already drunk their whole supply , here is a receipe for homemade crème de cassis that I just found in the readers' section of a magazine : Drown 500 grammes of blackcurrant berries in 2 liters of eau de vie (as neutral tasting as possible) and let it marinate for two or three months . Then filter it and add 170 grammes of sugar per liter of filtered juice . Wait another few days and then bottle the juice . Then you can also use the alcoholized berries to make some jam, by boiling them for ten minutes with their same weight in sugar . This strong jam is to be eaten with game or guinea fowl, either by itself or as a base for the sauce .

Uh oh happy...that and a case of champagne and you could be VERY happy, for a LONG time. ;D
Thanks for that recipe Anne - it's something I wouldn't have thought of doing on my own (although my husband has been known to brew beer!!)
