I am reading a recipe for Tarte au Citron that asks for this ingredient.
Using an online translator, it comes up with untreated lemons, but I have no idea what untreated lemons are. My greengrocer either has lemons or he doesn't - I can't ever recall having a variety to choose from. ;D
Has something been lost in translation?

I looked it up in my Larousse. It seems lemons and oranges are sprayed with some chemical to preservethem after harvest.
I'd just make sure to wash them carefully, which I do anyway, especially if you are going to use the zest.
I doubt if the flavor is any different.
My husband laughs at me, I even wash bananas before I peel them.

Thanks for that. Yes, the recipe does call for lemon zest so I would have washed them in any case. My husband laughs at me, I even wash bananas before I peel them. I kind of agree with your hubby.

""citrons non traités" are organic ones . As Demarais wrote it, lemons and oranges are usually sprayed with chemicals, and much more so than most other fruits because one isn't expected to eat their skin anyway, so why should the producers show restraint with chemicals here ? I ALWAYS buy organic lemons when I plan to use the zest . Well, I buy organic fruits most of the time anyway . Now, I don't think that professionnal pâtissiers care to use organic lemons when making their tartes au citron ...

I'd say that "non traités xxx" means that they are "organic". That their surface is not sprayed with pesticides or funghicides - and as demarais says: that they have not had any chemical preservatives sprayed on them. I always buy organic lemons or oranges, if I want to grate the zest and put into a dessert or cake. Know what my stupid S/O does ? He actually EATS the raw peels from citrus fruits, also the sprayed ones !! Maybe that's why he looks so well-preserved...... anne266 - we must have posted at the same time !!
