Can someone please share a recipe for crepe batter? I'm already missing them....
I especially love the fromage et jambon.

Andie, here's the one I've used for years:
Basic Dessert Crepe
1 1/4 cups flour 2 tablespoons sugar pinch of salt 3 eggs 1 1/2 cups milk 2 tablespoons butter, melted
Place all ingredients in a blender and mix well. Let batter stand for at least an hour in the refrigerator before using for best results. You'll need to experiment with the right amount of batter for your preference and size of pan, just make sure the pan is good and hot, and well-oiled (or buttered!).
I've never tried making buckwheat crepes for savory fillings, but I'm sure you can Google a recipe for those. I have made successful crepes for savory fillings with this recipe by cutting the sugar down to just a pinch, or leaving it out entirely.

Remember, though, you wouldn't want to use a batter with sugar for a savory crepe!

If you replace part of the milk with beer (I do about 2/3 milk, 1/3 beer), your crepes will taste lighter . I know that some people use beer only, no milk, but somehow that doesn't sound like "real" crepes to me ...
I put a sachet of vanillia sugar in the batter for dessert crepes, and you can also add a spoon or two of rhum .

Anne - If you put beer in the batter, does it acquire the taste of beer? Not at all, at least not if you only put 1/3 beer . And that's not stout ale of course, just lager (Budweiser-kind) .
