Hello, My dinner, as my guests told me, was great. The boeuf bourguignon was fantastic. I used Ina Garten's recipe from her book BAREFOOT IN PARIS. I did tweek the recipe somewhat. I didn't have any brandy or Cognac on hand so I omitted. I made my own mashed potatoes. I always use redskin potatoes and leave on the skins and use plenty of butter and half and half. I made the ROASTED BEETS from the book and I recommend them to you. Here is the recipe: ROASTED BEETS 21 beets 3 TLBSP good olive oil 1&1/2 tsp fresh thyme leaves, minced 2 tsp kosher salt 1 tsp freshly ground black pepper 2 tlbsp rasberry vinegar juice of 1 large orange Preheat over to 400 degrees. Remove tops and roots from beets. Peel with vegetable peeler and cut into 1 1/2 inch chunks. Place the cut beets on a baking sheet and toss with the olive oil, thymy leaves, S&P. Roast for 35 to 40 minutes or until tender. Remove from oven and immediately toss with vinegar and orange juice. Sprinkle with S&P to taste and serve warm! I used the recipe for the profiteroles exactly from the book. If anyone wants me to post the recipe I will gladly do so. So, PR has been inspired from her trip to Paris. I will continue to do some french cooking.

I've been meaning to roast some beets so I'll be using that recipe probably next weekend! But do I have to have 21?? And I'm with Demarais on the profiteroles!

Ma,
What kind of beef did you use? I know that you bought it from the butcher...see gitte's plea in your other thread...how did you get it to come out so tender?
