Over the last few years for grande dejeuner, we have had an omelette at "Au Rocher de Cancale" No 78 rue Montorgueil, or at Les Editeurs." The cheese used is very light and seems somewhat sweet. Does anyone know what type of cheese they use? I have tried several and they are just not light or sweet enough.

Light might make me think of a goat cheese, but there's usually a tang, not a sweetness, to that. I might say Cantal, except that's not light. Farmers cheese? I don't know if there's a French equivalent. I give up.

Greyhost, it may actually be FRESH goat cheese ("chèvre frais") : it has a texture a bit thicker than what the English call "cottage cheese" and it also has a kind of sweet after-taste .
