Hi all, My kids are home from camp and I let them choose the menu for our next dinner. Here's the choice for dessert - it is not for the timid! (it's not light and airy as a typical mousse - more pudding like in texture) But if you like chocolate...yummm. I use the best chocolate I can find - preferably French Recipe courtesy of Chez Panisse Desserts: Makes 3 Cups: 4 oz semi-sweet chocolate 2 TBL coffee or water 4 eggs 1/2 Cup unsalted butter Chop the chocolate into small pieces and melt with the coffee (I use coffee) or water in a small saucepan over hot water, stirring constantly, until smooth and glossy. Remove from heat. Separate the eggs, put the whites in a bowl, and whisk the yolks 1 by 1 into the chocolate until well mixed. Cut the butter into pieces and whisk it in until smooth. (Set over the hot water if the butter doesn't melt). Warm the egg whites slightly and beat them until they hold soft peaks, then fold over quickly into the barely warm chocolate mixture. Pour into a bowl or individual glasses and chill. Serve with creme chantilly (I've used fresh raspberries too). Or all by its chocolate self!

By my own (very individual) calculation, this has no more than 50 calories per serving (2 servings per recipe), because it's from a French restaurant and therefore equivalent to eating on vacation (which, as we all know from experience, adds no calories whatsoever)! ;D

Shoesy...it's worth the few extra pirouettes ;D
I'm of the opinion that EVERYTHING is ok in moderation, as long as it's made from fresh (and preferably natural) ingredients. I think that it's all this processed food that causes problems. I guarantee that those pre-packaged pudding snacks are WAY worse for you than a helping of my mousse!!

I don't like dark chocolate. Does this have the dark chocolate "bite"? I notice it doesn't call for sugar or cream.

No sugar, Penny! But I'm sure that you could use milk chocolate instead of the dark and it would be sweeter without the bitter dark bite (which I love )

I'm actually not a chocolate lover. I don't hate it, mind you. That would be too strange, but I prefer vanilla.

But there's "vanilla ice cream" (i.e., no real flavor!) and then there's " French vanilla ice cream" (which I love, and especially when studded with chocolate covered almonds!).

I love plain chocolate, chocolate mousse, pain au chocolate, chocolate cakes, you name it... but I REALLY don't like chocolate ice cream. Weird! I like praline too, Happy...I love caramel.
