I don't know if this is where I am supposed to give a recipe or not. I am new to all this and I am not too swift with the computer. Anyway, thought you may enjoy this recipe if you have never had it.
FRENCH POTATO SALAD
1 lb. sm red boiling potatoes 1 lb. sm. white boiling potatoes 2 Tbsp. chicken stock 2 Tbsp. good white wine 3 Tbsp. champagne vinegar 1/2 tsp dijon mustard 10 Tbsp olive oil S&P to taste 2 Tbsp fresh dill 2 Tbsp fresh parsley 2 Tbsp fresh basil
Boil potatoes with skins. Drain and peel when cool enough to handle. Add chicken broth and wine and let soak into the warm potatos.
Mix vinegar, mustard and olive oil. Add s/p and herbs. Serve warm or at room temperature.

Hi Mama! I love this potato salad! My version doesn't have the chicken stock, but I can absolutely see what that addition would bring to the party. I need to make a batch for a wedding shower in a couple of weeks. 25-30 people attending. How many potatoes does everyone think I should use? I was thinking that 5# should be enough...does that sound like too much???

I definitely don't think that sounds like too many potatoes for that number of people, Happy. Could you please tell us what other dishes will be on the menu?

I'm making chicken satays, spinach and feta in phyllo, smoked salmon tea sandwiches, egg salad tea sandwiches, a mesclun salad from my garden, the potato salad, and an assortment of tiny pastries for dessert trays. I'm thinking of making a lemon and thyme punch with and without vodka.

I love your menu, Happy, especially the spinach and feta concoction. I like the idea of non-alcoholic punch for those who prefer it that way.

I called LM and asked her your question, happy (she has littlesistereurope and my 14 year old nephew staying with her and she said that they have totally hijacked her computer...AND the nephew sleeps in the computer room!)
SO, I am to relay her thoughts that she agrees with Truffaut...more like 10 lbs (and I concur, FWIW).
Oh, and this potato salad really is quite delicious - I had some a few weeks ago at LM's!

Luckymama; The salad is delicious! I love lightly dressed room temp potatos like that. Thank-you. Whats more fun is that the recipe has your name on it so you get the credit every time I make it!! Happygooin: We had a potato farm for many years so being somewhat (o.k. a little) authority on potatos, 5lbs. will not be enough. These spring menus make me happy. Ypu can almost see the ice melting off the cups and all those decorated trays pf sweets. HURRAY!!!!! for summer.

Hey LM, I made your potato salad last night, with fresh herbs from the garden. Mine tasted ALMOST as good as yours (I AM a good daughter ) Your oldest grand baby boy loved it and your SIL took it for lunch! Paris is less than 6 months away...yea!!

Happy, I use 5 lbs. to make potato salad for Easter...for usually 3-5 people these days!! (We like leftovers? And it is the usual heavier version with mayo and eggs!! And have to peel potatos!!! Your menu sounds great! What's the ingrdient list for the punch?(besides vodka?!)

Hi geordy...just got in to the office...sorry for the late reply. I don't know what else is in the punch. I'm at the office. I know it starts with a lemon syrup infused with fresh thyme. Tonic water? Seltzer? Maybe a nice Hawaiin Punch??? (just kidding) I don't remember.
I am making out the grocery list tonight. I'll tell you tomorrow. All you people have made me rethink how many potatoes to buy.
If I have 14# of potato salad left over and I have to take it all home and I eat it all myself and I gain 100 lbs and don't fit in to the airplane seat to get me to Paris, I'm going to find you all and "moidalize" you all (as Curly would say)!!

You are very welcome. So glad you enjoyed the potato salad. I wish I had some more "French" recipes. I do have some German ones.
