As far as ambiance and atmosphère they will be very similar since the location is so close one to another.
I know rue Pavée since I cross it everytime we walk back to our studio, while walking down rue des Francs Bourgeois. It is a couple of streets before Place des Vosges, so the neighbourghood is splendid. It is rather pricey but from the list on the website it seems equipped enought to justiced the price.
The other one is much smaller at 25 m2 and the price reflect that.
That section of the Marais is quiet but if I where you I would ask if the windows have "double vitrage" just to be on the safe side since you are a light sleeper.
From neither you would walk to Le Louvre in about 20 minutes.

I like the 2nd one best because it is quite abit bigger and comes with a computer and air conditioning. I would not , however, consider it worth a whole lot more money. You really do spend most of your time out and about so I like to keep my Euros for nice dinners and sometimes little gifts. I think someone here has actually stayed in the VIP apartment recently. I have rented 3 different times from VIP with a good success rate. I considered renting that particular apartment but chose a difffernt one becuse I was worried about having too many steps to climb at night. We are a little older than you and live in a one story house. After dealing with the metro steps climbing three more sets to get to the apartment would get to be a chore for us.
