Dinner tonight was one of my favorite things to bring back from Paris - duck confit. Tasted fine - but not nearly as good as eating it in Paris.
I used some of the fat to cook potatoes, but there's still plenty left. I'd have to cook potatoes for the entire neighborhood to use it all.
I hate to throw it out. Can I freeze it?

Hi Janet -- For the best preservation, filter it through a paper towel or some cheesecloth (you can use a coffee filter, but it will take forever) Then pour it into a container and either put it in the refrigerator, where it will keep for months, or in the freezer.

A confit is so easy to prepare, and in addition to leaving everyone raving about your cooking, will supply enough leftovers for several delicious weeknight meals. ...
