Imagine how I feel Happy..I keep waiting to hear someone else's experience of the place and I get "broad in the beam elastic waistbands"!!
I guess ii "fits" thought...eat there too often and......

Posting this from Paris (more later when I'm back home!) Had dinner at Le Souffle last night. It was wonderful. We arrived a couple of minutes early, but were seated right away. We had our choice of a table in the front or a corner table in the back. As this was a romantic night with my husband, we chose the back table.
Our waiter was willing to converse in a mixtue of English and French, so communication was not a problem. We began with a bottle of Sancerre. There was delicious bread waiting us at our table and the waiter brought some butter which we enjoyed as we were looking over the menu. We each chose the menu of three souffles. (Luckily I had already read posts on this restaurants so we ate very light for lunch!) We both started with a cheese souffle, light and creamy. The top was browned and there was a wonderful cheese layer at the very bottom. The entree was followed by a salad with a nice vinigarette. For our main course we selected Henri IV which was chicken and mushrooms in a creamy sauce. It was exactly as Geordy described. The waiter punched a hole in the center and then poured in some of the chicken and sauce. He then left the sauce for us on the table.
Now for my favorite - the dessert! My husband had souffle noisette, which I believe was a hickory nut. It was good but could not compare to my chocolate souffle. The waiter pieced the top and then poured in the most heavenly chocolate sauce. It was a pity that I was very full at this point and could not finish it all. Perhaps I should have started my meal in reverse order!
Our meal was finished with a cup of that wonderful French coffee. Dark and white cane sugar cubes and crystals were brought in a bowl along with a bowl of candy. Altogether it was a truly enjoyable meal. It felt tres Parisian and the staff was cordial.

It sounds like you had a great meal. Your selections sound delicious, though I think I would prefer something other than the chocolate for dessert. Continue to eat well over there.

Oh...YUM! This is sounding more and more like a "must do" to me! Since everyone seems to get so full on 3 souffles and a salad, I'm thinking maybe I'll just order 2, but I can't decide which 2 courses to limit myself to! I suppose it will be main & dessert, because that chocolate souffle sounds divine to me! But so does the cheese starter!

Since this restaurant is on Sistereurope's and my list of must-do's, I'm wondering if either geordy or roundtowngirl remembers if there is a souffle with any sort of blue cheese in it? I love blue cheese and it's great in a souffle. I'd love to try one if they have it.

Since this restaurant is on Sistereurope's and my list of must-do's, I'm wondering if either geordy or roundtowngirl remembers if there is a souffle with any sort of blue cheese in it? I love blue cheese and it's great in a souffle. I'd love to try one if they have it. Happy, sounds like you've been putting Ina Garten's recipe to good use! It is yummy!

Annette, actually I found a recipe about four years ago in an ad (of all places) in a Gourmet magazine. I think the ad was for a resort someplace and their chef was sharing a recipe. I just love any kind of blue cheese anyway, and it's that much better in a souffle. They're wonderful! I do remember the Barefoot Contessa show you're talking about though...I remember thinking that if I wasn't so happy with the recipe I have, I'd try hers. Her recipes are usually spot-on for reliability.
PS. Not that I mind Comte in a souffle anyway...it's one of my favorite cheeses.

Just read a review that was not favorable for this restaurant. I had such a great meal when we visited. Thought I would bump it up in hopes that someone visits and lets us all know that it is still a fabulous place. Everyone was so nice and the food was so delicious that I hate to see it get bad press.

I had a 3-course dinner (3 souffles ) last year, and it was delicious, but much too much. Last month I was there again and ordered just a cheese souffle for lunch. It was yummy this time too.
