Well, now that I know that blini and blintzes are the same thing, I will say that I absolutely love an occasional caviar and sour cream blini . . . . yum!

Last night we went to a cafe with two other couples, and guess what I ordered...............my favorite spinach and ricotta blintzes! Everyone else took a year and a day trying to decide what to have, but this thread was still very fresh in my mind, so I was the first one to make up my mind. Loved my dish!!! ;D

Blini and Blintzes are NOT the same thing!!! A blintz is a thin pancake, almost exactly like a crepe, but half the size. It is served rolled and stuffed with a cheese-based filling that can be either sweet or savoury. Blini are think savoury pancakes, again half the size of a blintz, served flat with any variety of toppings, but traditionally creme fraiche and caviar.

phread - While I agree that cheese is the most common ingredient for a blintz filling, there are other non-cheese fillings that can be found in blintzes.

Ray you should give the Staffordshire Oatcake recipe a try......definately not a crepe or blini or blintz but along the same lines.....I can't describe how yummy they are!
