I believe in France there are more cheese related deaths than egg ones. And NOBODY is keeping me from eatin' my chesses!!! None of it is as dangerous as getting into a car these days, so might as well live a lot.
My favorite French cookbook is the Zuni Cafe. Her scrambled egg and truffle recipe includes adding pats of butter to the mix. They are sinfully rich and delicious.

Death by cheese?!?! Yeah, I guess there are worse fates...
(Is that recipe from the Zuni Cafe in SF, Phread? I wasn't aware the the chef was a woman, or that they had French dishes on the menu! It was on my short list and we never made it, unfortunately)

Happy, Ive had the same revolt. I love to cook my eggs on low heat, moving the pan around the entire time. This results in a wonderfully cooked soft scrambled egg the no one eats but me!! Susan

I also do scrambled eggs on very low heat, stirring constantly with a wooden spoon (sometimes with some chives or a bit of herb mix), so they come out nice and soft but not quite runny (a fine line!)
